I’ve felt fairly good. I made it a few days ago and it’s very addictive. It looks like a “4” was missing. Because of the whole tofu thing, it’s a nutritious, whole foods dressing with no added oil or sweeteners at all. I also think it would be lovely with fresh sweet corn. Well, I was certainly wrong! Even though I was making this for the first time I altered the recipe slightly by adding about two tablespoons of white miso, to stand in for the anchovies that were part of the traditional non-vegan version, and leaving out the salt (as the miso provides salt). Add the tofu, garlic powder, salt, pepper, lemon juice, and mustard to a blender or food processor and run until completely smooth. After that, I started adding it to my salads, buddha bowls, stir-fries, you name it. Good stuff! If you’re planning to store it for a while you might want to forgo the fresh basil.
